Our casks rest on earth and stone floors in a warehouse that stays between six and fourteen degrees all year. In that cool, humid air, spirit evaporates slowly and alcohol is lost a little faster than water, so the strength drifts down gently over the years.
About two per cent of every cask disappears each year. Distillers call it the angels’ share. Stand in the warehouse on a still morning and you can smell it.
