— of water

Named for the cooper who rebuilt our first casks by hand, this rye takes a mash of seventy per cent malted and unmalted rye and rests it in newly made, heavily charred oak. The new wood works quickly, pulling deep colour and caramel into a spirit that never loses its peppery bite.
